I am forever trying to get L to enjoy coconut. There are so many wonderful dairy alternative products made with coconut that if she would just enjoy it, a world of foods would be open to her.
Finally this week it happened. “They” say to give a child a food item up to 12 times if you want them to like it. I didn’t go that far but I have been trying hard.
I LOVE coconut, love!
With shredded coconut in the house I knew it wouldn’t last long and instead of shoveling it into my mouth by the spoonful I incorporated it into my salad.
- mixed greens
- grilled portobello mushrooms (left over from last night’s dinner)
- craisins (rinsed to rid them of some of their sugar content)
- oil and vinegar
Layered and tossed it makes a sweet salad but you must enjoy coconut and PILE IT ON! YUM!
