Curry Slow Cooker Chicken

Steve creation from what we had so measurements are not 100% accurate.

  • 4-5 frozen chicken breasts
  • Enough curry powder sprinkled over to coat lightly
  • 2 cups frozen spinach
  • 1 cup liquid chicken stock
  • 1 cup mango salsa (Rosa’s from Sam’s Club- best ever!)
  • Medium white onion chopped
  • 1/2 cup scallions
  • 1 large white potato peeled and diced

In crock pot, high for 6 hours.   Steve only lightly shredded the chicken so I could pick it out for a veggie twist.  Little L even enjoyed this dish!
