Steve creation from what we had so measurements are not 100% accurate.
- 4-5 frozen chicken breasts
- Enough curry powder sprinkled over to coat lightly
- 2 cups frozen spinach
- 1 cup liquid chicken stock
- 1 cup mango salsa (Rosa’s from Sam’s Club- best ever!)
- Medium white onion chopped
- 1/2 cup scallions
- 1 large white potato peeled and diced
In crock pot, high for 6 hours. Steve only lightly shredded the chicken so I could pick it out for a veggie twist. Little L even enjoyed this dish!
