Like all parents, I am always searching for (relatively) healthy, QUICK, breakfast options for the kids.
I find a recipe for pancake muffins and altered to fit our needs. (The original called for syrup…not in this house.)
It was SUPER easy to make.
- 4 2/3 cups Bisquick Original Pancake mix
- 2 cups unsweetened almond milk
- 2 eggs
- frozen blueberries, strawberries and fresh bananas
- mix first 3 ingredients
- fill cupcake holders
- top with fruit of choice
- bake at 350 for 20 minutes
The girls did NOT like them once they were cooled down so about 10 seconds on high in the microwave is all you need.
This yielded 28 muffins.
