Last night Steve made dinner with what we had mostly “hanging” around. It’s an annoying talent he has for making a delicious meal out of nothing.
~cook white quinoa and mix in a can of rinsed black beans. After that’s cooked top with fresh cilantro.
~Sautee shrimp, mixed with multi peppers (we used green, red and yellow), chopped onion and fresh garlic
~Sauce=about a 1/2 cup of water mixed with maybe 4 tablespoons of taco seasoning and a table spoon or more of yum-yum sauce
Top the quinoa with the sautéed mixture and mango salsa with a side of fresh avocado slices.
NO GLUTEN! NO DAIRY!
I had 4 helpings; yes FOUR! In fact we made it again tonight but added scallops.
