We love pumpkin in this house. OK, maybe not everyone but they all love my pumpkin muffins and all things full of pumpkin fun.
After the brilliant Kim from Little by Little Blog posted her recipe on pumpkin bread I started making it daily. Well, not daily but it seemed like it the way my family was eating and requesting it.
I’ve altered the recipe just slightly.
- 2 3/4 C sugar
- 1 C pumpkin (canned)
- 1 C canola oil (it’s the only oil I had)
- 3/4 C water
- 1 C cinnamon apple sauce
Blend all these ingredients together until super smooth then fold in the following:
- 3 C flour
- 1/2 C hemp seeds
- 1 t each (or approximately) cinnamon, pumpkin spice, allspice, salt
- 2 t baking soda
Bake in 350 oven for 20 minutes for cupcakes. Bread, mini loaves, will take a good hour with a tin foil cover for the last 30 minutes.
I love the texture and color of the batter!
